Turmeric Coconut Broth

Ingredients

100g cooked wild rice

½ broccoli steamed

1 carrot, julienned

Sliced chilli and spring onion to go on top

Broth:

1 can of coconut milk

200ml of water

1 thumb of ginger, grated

2 garlic cloves, crushed

1 tsp of turmeric

½ chopped red chilli

1 lime

1 tbsp of tamari

Tofu:

½ pack of tofu, pressed and drained

1 tsp of sesame oil

1 pinch of chilli powder

1 pinch of garlic powder

Directions

Broth: Place all Ingredients other than lime in pot and simmer for 20 mins.

Tofu: Heat the oil in a pan. Cut the tofu into squares and rub in spices and salt. Fry until golden all over.

Plate together and serve warm with lime juice.
