Briam - Greek Roasted Vegetables

Ingredients

2 Chinese Eggplant

2-3 Zucchini’s

3 potatoes

2 medium red onions

2-3 garlic cloves

1 red pepper

1 green pepper

1 1/2 cups crushed tomatoes

2 tbsp tomato paste

1/2 cup extra olive oil

1 tbsp oregano

A handful of fresh parsley

Directions

Slice all the vegetables roughly the same size. Place them in a large baking pan .

In a bowl add the olive oil, crushed tomatoes, tomatoe paste, oregano, salt and pepper and mix. Pour over the vegetables and mix using your hands or a spoon.

Cover with aluminum foil. Bake at 375F to a preheated oven for about 45 minutes. Then take the pan out of the oven and stir and flip the vegetables gently and cook for another 30 minutes until nicely coloured.

Serve with feta and fresh bread!
