Ginger Crinkles

2/3 cup oil
198g Sugar
1 egg
84g molasses
240g AP flour
2tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp salt
Extra granulated sugar
Directions
1. Mix oil and sugar; add egg and stir in molasses
2. Sift dry ingredients together; stir into wet ingredients
3. Refrigerate 2 hours minimum
4. Preheat oven to 350°F
5. Shape into teaspoon size balls; roll in granulated sugar
6. Place 1” apart on ungreased cookie sheet, flatten slightly with bottom of glass
7. Bake 15 minutes; less for chewy cookie, slightly more for crisp cookie
