Ingredients

1 tablespoon + 1 teaspoon vegetable oil (divided)

1 cup broccoli florets

1 cup mushrooms, halved

1 small onion, sliced

1 red bell pepper, sliced

2 boneless skinless chicken breasts, cut into bite-sized pieces

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

½ cup chicken broth

1 teaspoon cornstarch

½ teaspoon sesame seeds (optional garnish)

1 tablespoon chopped parsley (optional garnish)

Directions

Heat 1 teaspoon vegetable oil in a large skillet over medium heat.

Add the broccoli, mushrooms, onion, and red bell pepper. Cook for about 4–5 minutes, stirring gently until the vegetables begin to soften. Remove from the skillet and set aside.

Add the remaining 1 tablespoon vegetable oil to the skillet.

Add the chicken pieces and cook for 5–7 minutes, stirring occasionally until the chicken is cooked through and lightly golden.

Stir in the minced garlic and cook for about 30 seconds until fragrant.

In a small bowl, mix the soy sauce, oyster sauce, chicken broth, and cornstarch until smooth.

Pour the sauce into the skillet with the chicken and stir gently.

Return the vegetables to the skillet and cook for 2–3 minutes, stirring slowly until everything is coated in the sauce and heated through.

Sprinkle with sesame seeds and parsley if desired before serving.
