Poor Man's Oysters Rockefeller

2 cans smoked oysters, drained of oil
1 cup fresh spinach
1 tbsp garlic paste
1/4 cup whipped cream cheese, softened
1/4 cup shredded Italian cheese blend
2 tablespoons butter
1/4 cup panko breadcrumbs
Salt and pepper to taste
Hot sauce to taste
Cajun seasoning to taste
Directions
Prepare the Oysters: Open can and drain oil from the oysters really well and pat dry while keeping the oysters in the tin
Prepare the Topping: Steam spinach in microwave for 30seconds. Then in a mixing bowl, combine the steamed spinach, softened cream cheese, and garlic. Season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.
Assemble the Oysters: Using a spoon or a small knife, carefully mound a generous amount of the spinach and cheese mixture onto each oyster, covering it completely.
Assemble the Oysters: Add 1 tbsp of butter to each tin along with some cheese and panko breadcrumbs
Bake: Transfer the baking dish to an air fryer and cook for 5 minutes on 450 or until the topping is golden brown and bubbly, and the oysters are heated through.
Serve: Once done, remove the Poor Man's Oysters Rockefeller from the air fryer and let them cool for a few minutes. Serve them warm as a delicious appetizer or snack with your faorite bread or crackers
Notes
No cream cheese and add extra Parmesan cheese. I won’t cook In the tin can. Use small baking dish.
