Kickass High Protein Vegetable Biscuits

Ingredients

THE BISCUITS — WET

5 eggs

1/2 cup 2% cottage cheese

1/4 cup parmesan, shredded

1/2 red onion, diced

1 red pepper, diced

1 jalapeño, diced

THE BISCUITS — DRY

2 cups oat flour

2 tsp baking powder

1 tsp smoked paprika

2 tsp garlic powder

1/4 tsp cumin

1/4 tsp oregano

1/4 tsp thyme

2 tsp salt

1 tsp pepper

THE SANDWICH

1 lb ground turkey

optional toppings:

avocado

spinach

cheese of choice

Directions

Preheat oven to 350°F and line a baking sheet with parchment paper.

Whisk together all wet ingredients in a large bowl until fully combined.

In a separate bowl, whisk together all dry ingredients until evenly mixed.

Combine wet and dry mixtures and stir until just combined. Let dough rest for 15 minutes to absorb moisture.

Scoop dough with an ice cream scoop into 7 evenly sized biscuits and place on the lined baking sheet.

Bake for 12-15 minutes, or until tops are lightly golden and firm to the touch.

Cook ground turkey in a skillet over medium heat until browned and fully cooked.

Slice biscuits in half, add the cooked turkey, and layer with your choice of toppings.
