Beef and Golden Potato Skillet with Dill

½ yellow onion, diced
2–3 cloves garlic, minced
1 lb ground beef
6–7 small golden potatoes, thinly sliced
1½ cups beef broth
1–2 tsp dried dill (or 1 tbsp fresh, chopped)
Salt and black pepper, to taste
Directions
1. Sauté the aromatics:
Heat a large skillet over medium-high heat. Add a drizzle of oil if desired. Add the diced onion and cook for 3–4 minutes, until translucent.
2. Add garlic:
Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
3. Brown the beef:
Add the ground beef to the skillet. Season with salt, pepper, and half the dill. Cook until the meat is browned and fully cooked, breaking it apart with a spoon as it cooks.
4. Simmer with potatoes:
Pour in the beef broth and bring to a light simmer. Add the sliced golden potatoes, stirring to coat. Reduce heat to medium-low, cover, and simmer for 10–15 minutes, or until the potatoes are tender.
5. Finish and thicken:
Remove the lid and sprinkle in the remaining dill. Continue cooking uncovered for another 5–10 minutes, stirring occasionally, until most of the liquid has evaporated and the mixture thickens slightly.
6. Serve:
Taste and adjust seasoning with additional salt or pepper as needed. Serve warm as a hearty one-pan meal.
