Lemon Chicken & Veggie Orzo Stir Fry

Ingredients

2 cups orzo pasta

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 bell pepper, sliced

1 zucchini, sliced

1 cup broccoli florets

2 cloves garlic, minced

1 lemon, juiced and zested

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Directions

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt, pepper, and dried oregano. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Stir-Fry the Vegetables: In the same skillet, add the bell pepper, zucchini, and broccoli. Sauté for about 5 minutes until the vegetables are tender-crisp. Add the minced garlic and cook for an additional minute until fragrant.

Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked orzo, lemon juice, and lemon zest. Toss everything together until well combined and heated through.

Garnish and Serve: Remove from heat and garnish with chopped fresh parsley. Serve warm and enjoy this delicious and refreshing stir fry!
