Quick Coffee Cake Muffins

Ingredients

STREUSEL

⅔ cup brown sugar

1 tsp cinnamon

⅓ cup butter, softened

⅓ cup flour

MUFFINS

2 eggs

⅔ cup milk

⅔ cup granulated sugar

¼ cup butter, melted

1 tsp vanilla

1⅓ cups flour

1 tsp baking powder

½ tsp baking soda

Pinch salt

Directions

1. To make the streusel: Combine all ingredients in a medium bowl and mix until crumbly.

2. To make the muffin batter: In a medium bowl, combine the eggs and milk and beat well. Add the sugar, melted butter and vanilla and beat. Stir in the flour, baking powder, baking soda and salt and mix just until combined.

3. Spoon half the streusel mixture into the batter and mix just until the batter is streaked with the streusel.

4. Preheat the air fryer to 350 degrees F. If you have a smaller air fryer, place paper cupcake liners into foil cupcake liners, If you have a larger toaster-oven type air fryer, place cupcake liners into a muffin tin.

5. Fill each cupcake liner about three- quarters full. Sprinkle with the remaining streusel.

6. Arrange muffins in the air fryer, leaving at least 1 inch of space around each. Air fry for 11 to 14 minutes or until muffins are firm to the touch and lightly browned.

7. Remove and let cool for at least 5 minutes before serving.
