Ingredients

INGREDIENTS - SHORTBREAD CRUST

150g salted butter, cut into chunks

50g powdered sugar

1/4 tsp fine sea salt

1 tsp almond extract

195g all-purpose flour

INGREDIENTS - CRANBERRY CURD

325g cranberries

200g sugar

1/4 c lemon juice

zest of one lemon

2 eggs + 2 egg yolks

113g soft butter, cubed

pinch of salt

INGREDIENTS - MERINGUE

2 egg whites

100g sugar

¼ tsp fine sea salt

1tsp vanilla extract

METHOD - SHORTBREAD CRUST

Directions

preheat oven to 325F

mix butter, sugar, and salt, scraping the bowl often until well mixed

add extract flour, and mix just until combined

press into your tart pan making sure to go up the sides

parbake for 20 minutes and let cool

as an alternative - double the recipe and bake for 20 minutes, score the shortbread, and bake for another 20-25 minutes
