Directions

Step 1: Combine Milk, Cream, and Sugar

In a medium saucepan, combine the 2 cups Lactose-Free Milk, 1 cup Heavy Cream, and 0.75 cup Granulated Sugar. I like to use a saucepan that’s large enough to hold all the ingredients comfortably, as this helps prevent scorching. Heat the mixture over medium heat, stirring occasionally, until the sugar has fully dissolved and the mixture is just simmering. You’ll know it’s ready when it reaches 170°F to 180°F on a candy thermometer.

Be careful not to let the mixture boil, as this can cause it to curdle or develop an unpleasant flavor. If you notice any scorching or boiling, remove the saucepan from the heat immediately and start again.

Step 2: Chill the Mixture

Remove the saucepan from the heat and stir in the 1 tsp Vanilla Extract and 0.25 tsp Salt. Let the mixture cool to room temperature, then cover it and refrigerate it for at least 2 hours or overnight. I find that chilling the mixture thoroughly is crucial for achieving a smooth, creamy texture in the finished ice cream.

As the mixture chills, it will thicken slightly and develop a more complex flavor profile. This is because the cold temperature allows the flavors to meld together and the ingredients to hydrate fully.

Step 3: Churn the Ice Cream

Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions. I like to use an ice cream maker with a built-in compressor, as these machines tend to produce a creamier, more consistent texture. Churn the ice cream until it reaches a soft-serve consistency, which should take around 20-30 minutes depending on your machine.

As the ice cream churns, you’ll notice it thickening and becoming more aerated. This is because the churning process incorporates air into the mixture, giving the ice cream a lighter, more pleasant texture. Be careful not to over-churn, as this can cause the ice cream to become too stiff or even develop an unpleasant, icy texture.

Step 4: Freeze and Enjoy

Transfer the churned ice cream to an airtight container and place it in the freezer to harden for at least 2 hours. I like to use a container with a tight-fitting lid, as this helps prevent ice crystals from forming on the surface of the ice cream. Once the ice cream is fully hardened, scoop it into cones or bowls and enjoy! You can also customize your ice cream with your favorite toppings or mix-ins.

To ensure the ice cream remains creamy, I recommend storing it in the coldest part of your freezer and consuming it within a few days. If you find that the ice cream becomes too hard, simply let it sit at room temperature for a few minutes to soften before serving.
