One Pan Chicken & Halloumi Bake

2 large chicken breasts (I used part boned)
1 block of halloumi, sliced
1 large sweet potato, diced
1 bunch of cherry tomatoes
1 small courgette, sliced
A few broccoli florets
2 spring onions, chopped
A handful of fresh parsley, chopped
1 lemon, halved
Drizzle of olive oil
Salt and black pepper to taste
Directions
Preheat your oven to 180°C.
Prep the veg: Place the diced sweet potato, cherry tomatoes, and sliced courgette into a large roasting tin.
Add the chicken: Nestle the chicken breasts among the vegetables. Drizzle everything with olive oil and season well with salt and pepper.
Bake: Pop the tray in the oven for about 25-30 minutes.
5.Add the toppings: Remove the tray and scatter the broccoli florets and chopped spring onions over the dish. Place the halloumi slices on top of the chicken breasts.
6.Final roast: Return to the oven for another 10-15 minutes until the halloumi is golden and the chicken is cooked through.
7.Serve: Squeeze fresh lemon juice over the tray and garnish with chopped parsley. Serve as is or with a side of couscous!
