Creamy Tortellini Soup

4 TBS butter
1 cup chopped carrots
1 cup chopped celery
1 TBS minced onion
2 minced garlic cloves
2 TBS flour
6 cups chicken broth
1 tsp dried Italian seasoning blend
1/2 tsp pepper
1/4 tsp red pepper flakes (optional)
1/2 tsp smoky paprika
1(20 oz) pkg fresh cheese tortellini( not frozen)
2 cups Half/Half
1/2 cup shredded Parmesan cheese
1 cup chopped fresh baby spinach
Directions
1. Melt butter in large soup pan. Add carrots/ celery and cook till tender approx. 5-7 minutes.
2. Add minced onion and cook for 1-2 minutes then add minced garlic and cook for 1-2 minutes.
3. Stir flour in with vegetables and mix well. Cook for 2 minutes.
4. Add seasonings and chicken broth to pan and stir. Cook on medium for 7 min then reduce to simmer.
5. Add Tortellini and cook according to package directions(don’t overcook as it can get too soft)
6. Reduce heat and add half and half and gently stir to mix
7. Add parmesan cheese and stir gently till melted.
8. Add spinach and gently stir till wilted.
9. Serve in bowls and can top with additional Parmesan and fresh parsley!
