Marry Me Chicken Pasta | Creamy Tuscan Chicken Pasta

Ingredients

1 cup Penne Pasta (or pasta of choice)

2 boneless chicken breast

1 tbsp cooking oil

1 tsp butter

3 cloves garlic, minced

1/2 onion, minced

3 sun-dried tomatoes halves, chopped

1 tbsp tomato paste

1 cup heavy cream

1 cup chicken stock

1/4 cup parmesan cheese

fresh basil, for garnish

1 tsp garlic powder

1 tsp onion powder

1/2 tsp dried thyme (or Italian herb of choice)

1 tsp red pepper flakes

1/4 tsp salt

1/4 tsp pepper

Directions

In a bowl, combine together all of the dry spices.

Sprinkle about half of the spice mix onto the chicken, and rub to coat. Option to fillet the chicken in half lengthwise for quicker cooking.

To a pan, add oil. Then add the chicken breast and pan fry to cook on both sides for about 5-6 minutes, or until cooked through. Remove from the pan.

While chicken is cooking, cook the pasta just a minute under the cooking time stated on the packet. Drain and keep to one side.

Using the same pan, add butter, minced onions and minced garlic. Stir fry to combine, scraping the bottom of the pan to lift off any residual herbs and flavour from the chicken.

Add chopped sun-dried tomatoes and tomato paste. Add the oil from the sun dried tomatoes if there is any. Stir fry until fragrant.

Add heavy cream next, chicken stock, and the rest of the spice mix. Stir to combine and allow this mixture to come to a boil.

Once it boils, add the pasta, a dash of the pasta water. Add the parmesan cheese. Stir to combine.

Once combined, add back the chicken over the pasta. Garnish with fresh basil, and more parmesan. Serve immediately.
