No Bake Chocolate Peanut Butter Oatmeal Bars

3/4 cup drippy peanut butter

1/3 cup honey

1 1/2 cups rolled oats

1 cup semi sweet

1 tbsp refined coconut oil

Directions

In a medium-sized mixing bowl, combine the peanut butter and honey. Stir until the mixture is smooth and well combined.

Add the rolled oats to the peanut butter and honey mixture. Mix thoroughly, ensuring that all the oats are coated and well incorporated.

Line a loaf pan with parchment paper. Transfer the mixture into the prepared dish, then press it down firmly and evenly using the back of a spoon or your hands.

In a microwave-safe bowl, combine the semi-sweet chocolate chips and refined coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate chips are melted and the mixture is smooth.

Pour the melted chocolate evenly over the peanut butter and oat mixture, ensuring it covers the entire surface.

If desired, sprinkle a pinch of flaky sea salt over the melted chocolate for a tantalizing sweet-savory balance.

Place the dish in the refrigerator for at least 2 hours, or until the bars have set and the chocolate has hardened.

Once set, remove the dish from the refrigerator and cut the mixture into bars or squares of your desired size.
