Like Cucumbers and Ranch… but Elevated. and with Beans (duh)

Ingredients

2 medium cucumbers, seeded and diced

1 (15-oz) can chickpeas, drained and rinsed

1 very large handful fresh dill, finely chopped

1 bunch fresh chives, finely chopped

3/4 cup Greek yogurt (full fat is preferable!)

3 Tbsp mayo

Juice of 1/2 lemon

2 tsp red wine vinegar

salt and pepper to taste

Directions

Salt your chopped cucumbers and set aside for 15-30 minutes to draw out their moisture, then drain and pat them dry. I didn’t show this step on camera but it’s crucial to keep the salad from being too watery, especially if you’re making this in advance.

Add the remaining ingredients and stir it all together. That’s it!
