Creamy mushroom chicken with rice

650g Breast Fillets, halved horizontally
500g Sliced White Mushrooms
300ml thickened cream
2 bunches baby broccoli
Directions
in a microwave-safe bowl and cook in microwave on medium for 2-3 mins or until tender.
3. Divide rice, chicken mixture and baby broccoli among serving plates. Season.
1. Heat a large greased frying pan over medium-high heat. Cook the chicken for 2-3 mins each side or until cooked through. Transfer to a plate and cover with foil to keep warm. Cook mushroom, stirring, for 4-5 mins or until tender. Add cream to the pan and cook, stirring, for 2 mins or until sauce thickens slightly. Return the chicken to the pan. Season.

COOK. STORE. SAVE. If you have sour cream or crème fraiche in the fridge, use it instead of the thickened cream in this recipe.
