Ingredients

Tbsp olive oil

2 chicken breasts, diced 200g dry pasta

red+1 green capsicum, sliced

1red onion, sliced

packet fajita seasoning

1 tub philadelphia light cooking cream cheese

1 tub philadelphia light cooking cream cheese

Directions

1. Cook the pasta first.

2. Heat the oil & cook the chicken with 1/3 pack of fajita seasoning for 5 minutes or until no pink is showing on the chicken. Push to the side.

3. Add all the veggies & 1/3 pack of fajita seasoning. You may need to add more oil. Cook for 4 mins or until softened. Mix it all together. Make a hole in the centre.

4. Add in the whole tub of cream cheese, pasta & the remaining fajita seasoning. Cook until heated through. (And cut a piece of chicken in half to ensure it’s cooked)
