Ingredients

DOUGH

1 cup (140 g) flour*

100 g salted butter

1 egg yolk

2-3 tbsp cold water*

1/2 tsp dried thyme

FILLING

1 box standard brown mushrooms

1/2 pack white shimaji

1/2 pack red shimaji

Olive oil

Butter

Whipping cream

Shredded cheese blend of choice (mozzarella, gouda, caciocavallo)

Directions

DOUGH

Blind bake the crust

FILLING

Melt butter and olive oil in saucepan

Chop mushrooms and saute until liquids absorb

Season with S+P, thyme, and some grated nutmeg

And whipping cream and shredded cheese

Bake at 350 until browned

Notes

For gf, ima did 1/2 target all purpose and 1/2 almond flour. She didn’t put any water, and added more flour too.
