Ingredients

It literally translates to ‘hummus with meat’, and it’s such a simple yet cultural dish to add to your list. No need for silverware, which just makes it all the more fun to eat. The perfect introduction into Lebanese cuisine. But now the question is… what do I make next?

Directions

Drain two cans of chickpeas and submerge in cold water. Work the chickpeas with your

hands to get the peels to naturally come off. It’s a bit of a process but worth it for the hummus in my opinion

To a food processor add the peeled chickpeas, 3 tbsp of tahini, 3 garlic cloves, the juice of 1 lemon, a generous pinch of salt, a drizzle of olive oil, and a few ice cubes for a smooth and creamy spread

Blend everything until smooth, occasionally scraping the sides to incorporate everything

Chop 8oz of tenderloin steak into cubes. Season with 2 tbsp of seven spice (Baharat), salt, and a drizzle of olive oil

To a hot pan add olive oil (or ghee if available). Fry steak until cooked then remove from pan

Throw in a handful of pine nuts and toast until colored and fragrant. Add steak back in and get everything mixed and sizzling

Layer a generous portion of hummus, cratering the center of the plate and serving the sizzling steak in the middle. Garnish with additional pine nuts from the pan, pomegranate seeds, and chopped parsley. Enjoy with warm naan or crispy pita chips!
