Purple Sweet Potato Braided Bread
**For the White Dough:**
* 335 g bread flour
* 20 g sugar
* 4 g salt
* 3 g instant yeast
* 1 egg (55 g)
* 165 g milk
* 20 g butter
**For the Purple Sweet Potato Dough:**
* 335 g bread flour
* 20 g sugar
* 4 g salt
* 3 g instant yeast
* 1 egg (55 g)
* 145 g milk *(add gradually)*
* 20 g butter
* 2 baked and mashed purple sweet potatoes (150 g)
**For the Jam (optional):**
* 2 cups fresh blueberries
* 1/2 cup white sugar
* 1/2 tablespoon fresh lemon juice
* A pinch of ground cinnamon *(optional)*
Cook the jam and set aside to cool.
Knead both doughs separately. Transfer to covered containers and let rise. After 40 minutes, roll out each dough and shape as shown in the video, then place into a loaf pan. Let rise until doubled in size, brush with egg wash, and bake on the lowest rack of a preheated oven at 180°C (356°F) for about 40 minutes.
