Kosher for Passover Brownies

Ingredients

1/3 cup oil (grapeseed or avocado)

3/4 cup brown sugar

1/3 cup white sugar

1 tsp vanilla

2 eggs

1/3 cup cocoa powder

1/3 cup potato starch

1/2 tsp salt

Chocolate chips (~ 1/2 cup)

Directions

Preheat oven to 350°F.

Whisk together eggs and sugars.

Add in oil and vanilla. Whisk until well combined.

Mix cocoa powder with 1-2 tbsp hot water. Mix together with potato starch and, salt.

Combine wet and dry ingredients.

Fold in chocolate chips.

Pour into heavily greased 8x8”.

Bake for 25 minutes.
