Citrus Silan Chicken GF Passover

3 garlic cloves, peeled
1 shallot, peeled
Zest and juice of 1 lemon
Zest and juice of 1 tangerine
1/4 cup extra virgin olive oil
1/4 cup silan (date syrup)
1-2 sprigs of rosemary, removed from the stem
Salt
Pepper
1 whole chicken, quartered or spatchcocked
Directions
Preheat oven to 350°F.
In a processor, combine garlic, shallots, lemon zest and juice, orange zest and juice, oil, silan, rosemary, salt and pepper.
Pour citrus silan marinade onto chicken, making sure to coat both sides and under the skin.
Roast, covered tightly for about 1 hour.
Remove from oven, raise temperature to 425°F.
Baste chicken, cook for 10 minutes, baste again and cook for an additional 10 minutes.
