Red Coconut & Lime Fish Curry

Ingredients

2 fillets of fish (i used barramundi, can use cod, salmon)

1 red capsicum, sliced

2 spring onions, diced

1 clove garlic, chopped

1 tsp ginger

1-2 tbsp red thai curry paste (i used 2 but go easy if you prefer mild)

Handful of chopped green beans (optional but extra veggies - can add what you like here!)

1 lime (zest and juice)

1/2 cup of chicken stock

Directions

Add spring onion, garlic and ginger to pan, cook until fragrant

Add capsicum and curry paste, let this cook for a few mins

Then add tin of coconut milk, 1/2 cup of chicken stock, half the lime juice, and let simmer for 10 min

Add in fish fillets and cover, leave to cook for 7-10 mins until fish is flaky.

Serve with rice - I also had some extra spinach which went perfectly.
