Roast chicken & vegetable bake 💌
The perfect wholesome dinner 🥹
For the chicken
1kg chicken thigh
1kg spud lite potatoes
3-4 large carrots
1/2 cup chicken stock
2 bunches broccolini
Chicken marinade
1 tbsp @cocobella natural yoghurt
2 tbsp tamari
2 tbsp tomato paste
Juice of 1/2 lemon
1 heaped tbsp minced garlic
1 tsp paprika
1/2 cup chopped parsley
1/4 cup coriander
1/4 cup dill
Directions
Preheat oven to 180°C
Add to about 1kg chopped potatoes & 3-4 large carrots to a large baking dish.
Cover with 1/2 cup chicken stock, salt, pepper & EVOO 🫒
Nestle your marinated chicken in (don’t need to marinade for long, 5 mins is fine)
Place in the oven & cook for 1 hr
At the 45 minute mark, shallow steam the broccolini (you could also add it in the oven, mine didn’t have space)
Serve & pour the liquid over the whole dish, add lots of pepper 💌
