Saya Çöreği (I made it with ground meat, but you can make it plain or with potatoes too. 🙌🏻)

Cup Measurement: 200 ml

Dish Measurement: 35 x 45 cm

500 g flour (4 cups)

100 ml water (1/2 cup)

100 ml milk (1/2 cup)

100 g yogurt (2 heaping tablespoons, preferably firm)

12 g salt (1 teaspoon)

10 g baking powder (1 packet)

300 g ground meat, 1 medium onion (grated), parsley, black pepper, salt (mix all together)

For the middle layers: 100 g butter and 50 ml oil (5 tablespoons). Melt the butter, add the oil, and mix.

Combine the dough ingredients. Knead until you have a smooth, non-sticky dough. Divide the dough into 4 equal pieces. Dust the tops with air. Cover the dough so it doesn't stick and let it rest for about 15 minutes (Sprinkle a little flour on the bottom of the dough to prevent it from sticking).

Roll out the rested dough until it's slightly larger than the serving plate. Spread the oil and ground meat filling on each of the four layers, overlapping them all. Let it rest for about 10 minutes so it can roll out easily. Now, using your hands, pull the edges of the dough as thin as possible. Seal it like an envelope. Apply the remaining oil to the areas left untouched. Let it rest like this for about 10 minutes more (let the oil set). Now, transfer the dough to your baking tray and flatten it with your hands (a round baking tray will also work). Brush the top with 1 egg yolk. Bake in a preheated oven at 190°C (350°F) on a fan-forced oven until golden brown. Do not cover or keep the dough in the oven after baking (this will keep the top and bottom layers crispy).
