Mediterranean Smashed Cucumber Salad

Ingredients

Cucumber

A large avocado

Fresh dill

Fresh chives

1/3 to 1/2 cup Walnuts

1 oz Feta cheese

Juice of 1/2 lemon

Sumac

Olive oil

Salt and pepper

Directions

Cut the cucumbers down the middle and smash them carefully with a large knife, the cut them into thirds.

Cut the avocado into chunks and add it to the bowl.

Finely chop the herbs and add to salad bowl.

Add walnuts to bowl.

Add the lemon juice, couple of pinches of salt, pepper, and 1 tablespoon of sumac.

Crumble 1 oz of high quality feta.

Drizzle olive oil
