Cinnamon Bourbon Pickled Peaches

Ingredients

• 4 ripe peaches, peeled and sliced

• 1 cup apple cider vinegar

• 1/2 cup water

• 1/2 cup brown sugar

• 1/4 cup bourbon

• 2 cinnamon sticks

• 1 tsp whole allspice

• 1/2 tsp vanilla extract

• 1/2 tsp salt

• Pinch of red pepper flakes (optional)

Directions

1. Add vinegar, water, brown sugar, bourbon, cinnamon sticks, allspice, vanilla, and salt to a saucepan.

2. Bring to a gentle simmer, stirring until the sugar dissolves.

3. Add peach slices and simmer for 3–4 minutes until slightly softened.

4. Pack peaches into clean jars and pour the hot pickling liquid over them.

5. Let cool completely, then refrigerate for at least 24 hours before serving.

6. Store refrigerated and enjoy within 2–3 weeks.
