Hot Honey Halloumi Bowl

Ingredients

2 sweet potatoes (roasted in 3 tbsp olive oil, 1 tsp salt + 1/2 tsp pepper)

6 stems broccoli (steamed)

1 pack halloumi (fried in 1 tbsp butter, 2-3 tbsp honey + chilli flakes to taste) @waitrose

Lettuce / green leaves for bed

180g / 3/4 cup natural yoghurt (mixed with 1/2 small lemon juice, 4-5 bunches chopped basil, 1-2 tsp honey @rowsehoneyuk + @maldonsalt and pepper to taste)

Handful pomegranates

Directions

Pre-heat oven to 180C/ 360F.

Chop the sweet potato into cubes and roast with the olive oil, salt and pepper for 35-40 minutes.

Move around after 20 mins.

Steam your broccoli until slightly soft but it still has a bite (around 5 minutes).

Fry your halloumi by adding butter to a frying pan on medium-high heat.

Add the sliced halloumi and fry until golden then add the honey and chilli flakes. Build your bowl with a bed of leaves to start, the steamed broccoli, sweet potatoes and halloumi. Finish with the dressing and pomegranates. Enjoy!
