Antioxidant Salad

Ingredients

¼ purple cabbage (½ if small)

2 carrots

1 red bell pepper

1 red onion

1 small bowl cooked corn

1 bowl pomegranate seeds

A handful of parsley

For the dressing:

½ tea glass (≈60 ml) olive oil

Juice of 1 small lemon

1 tsp sumac

1 tsp salt

½ tsp sugar or 1 tsp honey

1 crushed garlic clove (optional but highly recommended)

Directions

Finely chop all vegetables and place them in a large bowl.

In a separate bowl, whisk together all dressing ingredients.

Pour the dressing over the salad and mix well.

Let it sit for 15–20 minutes so the flavors blend beautifully.
