Pork Adobo-Inspired Bowl

Ingredients

1 lb pork stew meat (cubed)

1/4 cup rice vinegar

1/4 cup tamari

1 tbsp olive oil

1 bay leaf

1/2 tsp ground black pepper

1 tsp brown sugar (optional)

2 cups cooked white rice

2 cups steamed bok choy or spinach

Directions

Brown the pork:

Set a skillet or pot over medium heat. Add garlic-infused oil and sear the pork until browned on all sides (5–6 minutes).

Add marinade:

Pour in rice vinegar, gluten-free soy sauce, pepper, bay leaf, and brown sugar (if using). Stir to combine.

Simmer:

Cover and simmer on low heat for 35–45 minutes, stirring occasionally, until pork is tender and sauce is slightly reduced. Add water if sauce reduces too quickly.

Assemble the bowl:

Spoon pork and sauce over rice. Add steamed greens on the side. Garnish with optional green onion tops or sesame seeds (FODMAP-friendly amounts).
