1/2 of a seedless cucumber thinly sliced
1 carrot peeled
1 small head of broccoli cut into bite-sized pieces
12 oz of frozen shelled edamame (cooked according to package)
4 oz of rice noodles
for the sauce:
1/3 c soy sauce
3 tsp sesame oil
2 tsp honey
1 tbsp chili crisp
1 tbsp ginger
2 tbsp rice vinegar
for garnish:
sliced green onions
finely chopped cilantro
crushed cashews
for the chicken:
4 thin chicken breasts
marinade (I used Bettern Than Marinade Honey Teriyaki)
Directions
Preheat grill to 500 degrees and boil a large pot of water
Grill chicken for 5 minutes on each side
Cook noodles according to packaging
Combine sauce ingredients and stir well
Once noodles are done, add sauce and stir to evenly coat noodles
Add prepare veggies to bowl with noodles and stir to combine
Serve with green onions, cilantro, and crushed cashews for garnish. Dice chicken and add to dish.
