Recipe:

8 lbs ground venison

2 lbs fat of choice

1/2 cup chopped parsley

3 tbsp red pepper flakes

1 tbsp ground pepper

3 tbsp salt

4 tbsp fennel seeds

3 tbsp minced garlic

1 1/2 cup iced red wine

For the sausage casings we used pig casings that averaged between 32-38 mm in size. We let them sit in warm water for 10 minutes so they were pliable and able to be used!
