Ingredients

400ml lukewarm water

7g instant yeast

40ml Olive Oil

500g Bread / Strong Flour

1/2 x tbs salt or 1 tbs flakey salt

Directions

Add lukewarm water and yeast and whisk, add olive oil and whisk again. Add your flour then salt and mix really well till the dough is fully combined. Scrape the sides of a bowl with a dough scraper or spatula. Cover and rest for 20 minutes.

Do 1 x set of 4 stretch and folds cover and rest for another 20 minutes. After 20 minutes do another set and then cover and rest for 1 hour.

While dough is rest grease the bottom of a large oven dish and add parchment paper and sprinkle with flour.

When dough is ready sprinkle with flour and pour it out. Sprinkle the top with flour and cut into 3, you can slightly shape and separate them with your cutter. If it becomes too sticky sprinkle with flour again.

Cover and rest for 30, turn your oven to 230C and add a small dish with water to the bottom of your oven to create steam.

Bake for 10 min with the water, take it out and bake for another 22-25 min, leave on a wire tray to cool.
