Copycat Trader Joe's Green Goddess Salad Dressing

Ingredients

1 large avocado, pitted

1/4 small yellow onion, finely chopped

3 scallions, white and light green parts only

1 clove garlic, peeled

1/4 c. extra-virgin olive oil

1/4 c. (or more) water

3 tbsp. fresh lemon juice

2 tbsp. apple cider vinegar

1/4 c. loosely packed fresh basil leaves

1/4 c. loosely packed fresh parsley leaves

2 tbsp. sliced chives

Kosher salt

Freshly ground black pepper

Directions

In a food processor or blender, blend avocado, onion, scallions, garlic, oil, water, lemon juice, and vinegar until smooth.

Add basil, parsley, and chives and continue to blend, adding more water if needed to thin dressing to a pourable consistency, until combined; season with salt and pepper.

Make Ahead: Dressing can be made 1 day ahead. Store in an airtight container and refrigerate.
