French Toast Baked Oats

Ingredients

2 eggs

1 1/2 cups milk of choice

2 tbsp maple syrup

1 tsp vanilla

2 cups oats

2 servings protein powder (I use @promix vanilla whey protein)

2 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

How to:

Directions

Preheat oven to 350F.

Add eggs, milk, maple syrup and vanilla to a bowl and whisk.

Add oats, protein powder, baking powder, salt and cinnamon and stir well with a spatula.

Pour into a greased 8x8 inch dish and spread out evenly.

To make the topping combine 2 tbsp coconut sugar of brown sugar with 1 tbsp cinnamon. Sprinkle evenly over the top of the oats.

Bake for 25 minutes, then I like to serve it warm topped with Greek yogurt and berries!
