You’ll need (very flexible):

Bell peppers

Squash (butternut or kabocha)

Yellow or purple onion

Carrots

Fresh ginger

Garlic

olive oil, salt + pepper

smoked paprika or cumin

veggie or bone broth

coconut milk (optional)

How I make it:

1️⃣ Roast everything at 400°F with olive oil + seasoning until caramelized (35–45 min)

2️⃣ Blend with broth until smooth + creamy

3️⃣ Taste, adjust, add a squeeze of lemon if needed

4️⃣ Top with cracked pepper, olive oil, or seeds and enjoy 🥣
