Oat Banana Bread (Well Plated By Erin)

1 1/2 cups old fashioned rolled oats

1 cup (130g) whole wheat flour

1 teaspoon baking soda

1/4 teaspoon baking powder

½ teaspoon ground cinnamon

1/4 teaspoon kosher salt

1 1/2 cups mashed very ripe bananas (4 medium bananas)

2/3 cup honey or pure maple syrup

4 tablespoons unsalted butter (melted)

1/4 cup milk

3 tablespoons nonfat plain Greek yogurt

2 large eggs

1 teaspoon vanilla extract


Toast 1 1/2 cups oats at Gas 4 for 10 min until very light golden and fragrant, stirring once halfway through.

In a mixing bowl, whisk together 1 cup whole wheat flour, 1 tsp baking soda, 1/4 tsp baking powder, 1/2 tsp cinnamon, and 1/8 tsp table salt. Stir in the toasted oats.

Mash the banana in the bottom of a large mixing bowl and double check to make sure you have 1 1/2 cups. Whisk in 2/3 cups honey, 4 tbsp melted butter, 1/4 cup milk, and 3 tbsp Greek yogurt, 2 eggs, 1 tsp vanilla extract.

Add the dry ingredients to the banana-honey mixture. By hand with a rubber spatula, stir very slowly and gently, stopping as soon as the flour disappears. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the batter with remaining 1 tablespoon oats for decoration.

Bake for 30 minutes, then loosely cover the pan with foil, making sure that the foil shields both ends of the pan (because the bread is sweetened with honey, it will caramelize and become dark at the corners). Continue baking for 35 to 45 additional minutes (65 to 75 minutes total) to when the bread reaches between 93-98C at the centre.

Place the pan on a wire rack, and let the bread cool in the pan for 1 hour. Using the parchment paper handles, lift the bread and set it out on the rack to finish cooling completely. Slice and enjoy!

Result: soooooo good! I did get some reflux of this banana bread (like I did with banana peanut baked oatmeal) but blame that on my eating habits.

Recipe: as written. 130g wholemeal strong bread flour, 1 1/2 cups toasted oats, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp cinnamon, 1/8 tsp table salt, 4 mashed very spotted bananas, 58g melted butter, 3 tbsp fat free Greek yoghurt, 1/4 cup milk, 2/3 cup German honey, 2 eggs, 1 tsp vanilla extract.

Method: toast 1 1/2 cups oats on gas 4, melt butter for 2 mins, mash 4 bananas, add 3 tbsp Greek yoghurt, 2/3 cup honey, 2 eggs, and 1/4 cup milk, combined 130g wholemeal flour, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp cinnamon, 1/8 tsp salt, combine wet and dry ingredients until just combined, then scatter oats on top and bake 35 min, cover and 35 min until 93C and leave to cool in pan.

Next time: it’s perfect. Lol. Moist but hearty (baked oatmeal esque) and sweet without being unhealthy and a great chew.
