1 cucumber
1 orange bell pepper
1 red bell pepper
1 yellow bell pepper
1/2 a red onion
1 can navy beans
1 can black eyed peas
1 can chickpeas
1 can corn
1/2 cup feta cheese
3 tbsp light mayo
2 tbsp wine vinegar
1 tbsp lime juice
1 tsp garlic powder
2 tsp oregano
Salt and pepper to taste
Directions
Dice all of your veggies and add them to a large bowl. Drain and rinse beans and corn then add them to the bowl.
To the mixture add mayo, red wine vinegar, lime juice, sugar, garlic powder, oregano, and salt and pepper to taste. Toss until everything is well combined.
Store in the fridge for up to 4 days. I like to have this with rice crackers!
