Crockpot Chicken Gnocchi Soup

1 lb boneless skinless chicken breasts
1 cup carrots (sliced)
1 cup celery (chopped)
1 small onion (diced)
3 cloves garlic (minced)
4 cups chicken broth
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
1 cup heavy cream
1.5 cup grated parmesan cheese
Mozzarella cheese
1 spoon of cream cheese
1 package (16 oz potato gnocchi)
2 cups fresh spinach (chopped)
2 tablespoons butter
Directions
Place chicken breasts into the crockpot. Add carrots, celery, onion, and garlic on top of the chicken.
Pour in chicken broth and season with salt, pepper, and Italian seasoning.
Cover and cook on low for 6 hours or high for 3-4 hours until chicken is tender.
Remove chicken, shred with two forks, and return to the crockpot.
Stir in butter, heavy cream, and parmesan cheese until creamy.
Add gnocchi and cook for 20-30 minutes until tender.
Stir in spinach and cook for 5 minutes until wilted. Taste and adjust seasoning before serving hot.
