Mini Pecan Tarts

Ingredients

¾ cup brown sugar

2 eggs

2 tbsp oil (any variety)

1/8th tsp salt

1 tsp vanilla

1 cup chopped pecans

24 small wonton or egg roll wrappers

Directions

In a bowl add sugar, eggs, oil, salt and vanilla. Beat well. Add pecans.

Place two small wonton or egg roll wrappers in regular 12 cup muffin tin. Spray or brush with oil.

Divide pecan filling evenly into wonton shells and bake at 350F for about 12 minutes or just until filling is set and wonton wrappers are browned. Let cool.

Serve warm or keep in an airtight container.
