All you need is:
4 large carrots, ribboned
Optional - 1 cup English cucumbers, ribboned
¼ medium red onion, sliced
Chicken (I used 1 chicken breast, diced and cooked)
2 tbsp soy sauce
3 tbsp rice vinegar
1 tbsp toasted sesame oil
2 tsp honey or sweetener
2 tbsp sesame seeds
1 tbsp chili oil (or more!)
1/4 cup chopped green onion
1/4 cup chopped cilantro
1 garlic clove, minced or grated
1/3 cup cashews or peanuts, roughly chopped
