Cottage Cheese Pizza Crust — High-pr

Ingredients

1 cup cottage cheese (2 % - 4 %)

2 tbsp olive oil

2 tbsp grated parmesan cheese

1 cup all purpose flour

1 ½ tsp baking powder

1/8th tsp salt

2/3 cup tomato pasta sauce

1 cup grated mozzarella cheese

Directions

Purée cottage cheese until smooth. Add to bowl and add olive oil, parmesan cheese, flour, baking powder and salt.

Mix with hands until you can form into a ball. If too sticky add more flour, if too dry add a little water.

Place on parchment paper and add another sheet of parchment over top and with a rolling pin roll out flat into an 8” circle.

Peel off the top sheet of parchment paper, brush the dough with oil and bake at 425 F for about 15 – 20 minutes or just until lightly browned.

Add tomato sauce and mozzarella cheese and bake another 5 minutes until cheese melts. Enjoy!
