Blueberry, Bacon, & Brie Grilled Cheese

8 slices bacon
1 cup blueberries
4 thyme sprigs
4 slices sourdough bread (or bread of choice)
2 Tbsp butter
5 ½ oz brie
1 organic lemon
salt & pepper
Directions
Heat a pan over medium heat and fry the bacon until crispy. Then place it on a plate lined with paper towels to drain off any excess grease.
Wash the blueberries and gently pat them dry. Also wash the thyme and shake it dry.
Take the sourdough bread and thinly butter one side of each slice. Generously spread the brie on the unbuttered sides of two slices of bread. Place the blueberries and lightly press them down. Pluck the leaves from the thyme sprigs and sprinkle them over the blueberries. Grate some lemon zest over top, a touch is enough, and season with salt and pepper to taste.
Break the cooled bacon into smaller pieces and sprinkle it over the sandwich filling.
Now, place the two buttered slices of bread with the buttered side facing out on top of the other slices and press them down lightly.
Cook the sandwiches over medium heat until the underside is golden brown and the cheese begins to melt. Carefully flip the bread and cook the other side the same way. This takes about 3 to 4 minutes per side.
When the cheese is nice and creamy and the bread is crispy, remove the sandwiches from the pan, let them cool briefly, and cut them in half before serving.
