Asian Chicken Salad

Ingredients

For the Salad:

1 cup cooked edamame

1 cup cooked farro

1 radish, thinly sliced

Assorted fresh herbs of choice

Meat from one rotisserie chicken

For the Dressing:

1 1/2 tbsp fish sauce

2 tsp miso

1/4 cup Nakano Natural Rice Vinegar

1/4 cup Olive Oil

1 tbsp honey

Directions

Combine the dressing ingredients with a whisk, adjusting the flavors as needed.

Combine the edamame, farro, thinly sliced radish, pulled chicken meat, and herbs. The herbs can be loosely torn, no need for fine chopping, aside from slicing the green onion.

Toss the salad ingredients with the dressing and enjoy. This salad will keep well in the fridge for up to 4 days!
