Cozy Lentils

4 cloves garlic
[1:1:1 ratio of the next 3 ingredients]
1/2 yellow onion
2 celery stalks
2 carrots
2-2.5 cups dry green lentils
1 tbsp Better than Bouillon roasted chicken paste (or 4 cups of chicken broth)
Directions
Dice onion, celery, and carrots. Sauté in a large pot in 2 tbsp olive oil over low-medium heat until carrots are soft (about 10min).
Add garlic and sauce until fragrant (about 1min).
Add lentils, salt, and better than bouillon paste (1 tbsp dissolved in 4 cups of water). Bring to boil then cover and simmer for 4min-1 hour or until lentils are soft. (Add more water if lentils are drying out.)
