Spaghetti Alle Vongole- Tomato

Ingredients

1 onion or a few shallots, finely diced

1 tub pancetta or bacon lardons

1tsp chilli flakes

1 chilli pepper

3 garlic cloves, minced

1 tbsp nduja paste (optional)

Tomato paste

1 tin of finely chopped tomatoes or passata

350g spaghetti

1 pack mussels from Lidl- ideally garlic butter

I handful spinach

Directions

Cook pasta as per package instructions to just before al dents.

Fry the pancetta, then the onion/ shallots. Add the garlic.

Add the tomato paste and fry until dark red. Then fry the nduja or Calabrian chilli paste if using.

Add the tin of tomatoes. Bring to a boil, then reduce until simmering. Splash in some balsamic vinegar and season to taste - salt, pepper, Italian herbs.

And the mussels. Cook for 5 minutes. Note: mum + dad would also like shrimp/prawn

Add the spinach and wilt.

Add the spaghetti and stir well.

Serve. Would go well with crusty bread/garlic bread, and a robust salad, e.g. something rocket based.
