Atl Lemon Pepper Seasoning

4 large (or 5 small) lemons, zested
2 Tbs black pepper, coarsely ground
2 tsp garlic powder
2 tsp onion powder
2 Tbs flaky salt (like Maldon) or 1 Tbs kosher salt
2 tsp citric acid (optional, for extra zing)
Directions
Zest lemons using a Microplane and spread in a thin, even layer on a plate.
Dehydrate the zest by either leaving on the counter for a few days or microwaving on high in 30–60 sec intervals, stirring between, for 2–4 mins total until fully dry.
Combine all ingredients in a mortar & pestle or spice grinder and grind to your desired consistency. I like a medium grind with a few pieces of zest intact.
Store in an airtight container for 2–3 months. Shake well before using to reincorporate.
