Brownie Basque Cheesecake

Ingredients

200g dark chocolate

160g butter

70g sugar

100g flour

1 tbs cacao powder

1/3 ts salt

3 eggs

500g cream cheese

300g heavy cream

25g starch

70g sugar

vanilla extract

2 large eggs

Directions

Make the brownie. In a big bowl mix together eggs and sugar until slightly white mixture. Add flour and cacao powder and mix until incorporated. In a separate bowl melt chocolate with butter until dissolved. Let it cool 10 minutes and add to the batter. Mix with a spatula carefully until smooth. Pour into the baking dish and set aside.

Make a cheesecake. In a bowl mix together eggs, sugar and vanilla until combined. Add heavy cream and mascarpone and mix well until smooth texture. Add cornstarch and mix well with a whisk. Pour the mixture over the brownie and distribute evenly by shaking the pan.

Bake in the preheated to 175C oven for 1 hour or golden brown on top. Place a separate dish with a boiling water on the oven bottom and the cheesecake on the medium level.

The center should be slightly shaky.

Let it cool min 4-5 hours before serving 🌸
