Dynamite Sandwich 🌶️🧨
Ingredients
(My cup measurement is 200 ml)
For the dough:
• 600 g flour (4 cups + ¾ cup, meaning one finger less than a full cup)
• 75 ml water (slightly less than ½ cup)
• 200 ml milk (1 cup)
• 15 g sugar (1 tbsp)
• 10 g instant yeast (1 packet)
• 1 egg
• 30 ml vegetable oil (2 tbsp)
• 10 g salt (1 tsp)
• 25 g butter (at room temperature)
Preparation:
Place the flour in a mixing bowl and make a well in the center. Add warm water, milk, yeast, and sugar into the center. Let it sit for 5 minutes. Then add the remaining ingredients and knead into a soft, smooth dough. (I kneaded it for 10 minutes in a stand mixer. The dough consistency may vary depending on your flour quality; it should generally be soft.)
Cover the dough and let it rise. After rising, divide it into 14 equal pieces and form balls. Cover them again and let them rise one more time. Roll each out (with a little flour) to approximately 15×13 cm. Spread some butter inside, brush the top with milk, and dip the top side into breadcrumbs. Transfer to a baking tray, score the tops, and bake in a 180°C (fan-assisted) oven until golden brown. That’s it! 🙂
Here comes the dynamite! 🔥
• 600 g chicken breast (shred it up 😄)
• 1 tbsp chili flakes
• 1 tsp black pepper
• 1 tsp cumin
• 1 tsp red pepper powder
• 1 onion (finely grated)
• 3 garlic cloves (crushed)
• 1 egg
• Salt to taste
Mix all ingredients and let the mixture rest for at least 2 hours. Then coat each piece with flour and deep-fry until golden. After frying, dip them into a mixture of hot sauce and mayonnaise. This is one spicy chicken — hence the name!
For the sauce at the bottom:
I used:
• 8 tbsp mayonnaise
• 4 tbsp strained yogurt
• Some dried mint
